Apple Fritters

Peel, core and slice 6 large apples into 8 pieces per apple. Mix apple slices with 6 tablespoons sugar. Beat 1 egg yolk until fluffy and the egg white until stiff. Sift 1 cup all-purpose flour, 1 and ½ teaspoon baking powder, ¼ cup white sugar and ¼ teaspoon salt in a bowl. Add 1 teaspoon melted butter, egg yolk, 2 teaspoon calamansi juice and ¾ cup warm filled milk. Beat until batter is smooth. Fold in stiffy beaten egg white and dip sliced apples in batter. Cook in hot corn oil until brown and fluffy. Drain on absorbent paper and roll in cinnamon sugar. Apple fritters may be served hot or cold.
